The Provincial Council of Castellón has highlighted the quality of the products integrated in Castellón Ruta del Sabor with a gastronomic exhibition organized within the framework of the International Tourism Fair (Fitur) in Madrid. In a crowded room, the members of the group ‘8 chefs, 8 dishes’ have caught the audience with a modern elaboration of the traditional tomato coca that is so deeply rooted in the province. The chefs have combined different products that can be obtained in some of the 8 regions of the province, thus highlighting the great variety of gastronomic proposals from north to south. These masters of the kitchen have thus made a tribute to the traditional ‘coca’ pairing in the form of cover a select combination of the best of the products of Castelló Ruta de Sabor, with six different elaborations that have delighted the audience. The chefs present were Fernando Molina (La cuina de Fernando), Modesto Fabregat, (Serra d’Irta Alcossebre and Casino Antiguo de Castelló); Emilio Miralles, (Al d’Emilio de Vila-real); Asier Manzanos (El Vasco de Vila-real restaurant); Carlos Gutiérrez (Casa Roque de Morella restaurant) and Vicente Martínez (Casa Rabitas de Nules restaurant). One by one they have been elaborating the coca, in a choral way, shaping the product with the pairing of each of the ingredients, all products of Castellón Ruta del Sabor: coca dough, cream cheese Almedíjar, Penjar tomato, tanned artichoke Benicarló; cubes of cheese; truffle Morella and Benassal; Benassal hazelnut and oil. Throughout the elaboration the cooks have been telling the singularities of each one of the ingredients, seasoned with brushstrokes on the history of the coca of tomato and the varieties that there are. Finally, a tasting was offered to the attendees, accompanying the coca with a glass of red wine from Azuébar. The president of the Provincial Council, José Martí, present at the gastronomic demonstration along with the deputy of Tourism, Virginia Martí, has highlighted the virtuosity of the cooks, also stressing “the luck we have to enjoy in our province of all kinds of products and flavors that give a touch of quality, no doubt, to our tourist offer and our gastronomic proposal”. The demonstration took place one day after the official adhesion of the province of Castellón to the project l’Exquisit Mediterrani, with which the Provincial Council wants the typical products of the province enjoy the widest possible dissemination”.
